Date Nut Squares (Gluten-Free & Dairy-Free)

Lon’s been going light on dairy for a long time and as his intolerance grew more severe, he had to get more strict. At this point, he’s 99% dairy-free. While battling his digestive issues, he spent 6 months being gluten-free to see if it would help. It didn’t seem to benefit him so he is now eating gluten again. Earlier this year, while he was both gluten and dairy free, we went to the NY Produce Show and sampled a date nut treat at Devik International’s table. They market the Delilah brand of Medjool dates. They smartly had the recipe cards ready to give out and Lon made sure to take one.

Cranberry Sauce with Mandarin Oranges and Walnuts

Growing up, my mom always made turkey for Thanksgiving. The stuffing was always a Chinese Sticky Rice (which I asked my mom to bring this year) and the rest of the dishes on the table were also Chinese. Basically, it was a Chinese meal with a Roasted Turkey as centerpiece. I give my mom a lot of credit for trying to provide us with the Thanksgiving experience. We certainly stuffed ourselves silly and we usually had tons of extended family over. All requisites met right? Well, one year I told my mom everyone else had cranberry sauce so from then on she started to buy canned cranberry sauce. It was that stuff that came out of the can in one solid cylinder and was then sliced into rings. While not much of it was ever really eaten, we kept up the American tradition. Then one year my mom got a recipe from somewhere ( at this point she doesn’t remember where she got it) that mixed canned cranberry sauce, canned mandarin oranges, and walnuts, plus a little gelatin to hold it together more. I loved it and never let my mom forget to make that cranberry sauce every year after.

After my brother and I grew up and moved out, my mom stopped hosting Thanksgiving. I’ve been spending it with Lon’s family for the last several years since it’s not a Chinese thing…It’s been a long time since I’ve had to do more than just bring one dish.

Haroseth Balls

The delay in posting was due to technical difficulties. Yes, it’s quite technically impossible to overcome food coma, at least for me. Has anyone found a cure? Passover Seder on Monday night and Tuesday night is the probably cause, but I can’t promise to refrain from this dangerous activity. Isn’t there like a morning after pill for over-whelming meat consumption? I guess Korean BBQ for lunch didn’t help. In all seriousness, Passover Seder is full of wonderful foods that are symbolic and carry on the traditions. Without getting into too much detail (which I probably can’t on this subject) Haroseth Balls (sometimes Charoset) represent the mortar used when Jews were enslaved in Egypt.

Rugelach

Rugelach, not to be confused with arugula (a lovely peppery green), is a traditional Jewish pastry. To pronounce correctly, you should sound like you’re coughing up phlegm at the end.

Rugelach is the perfect thing to make this time of year. First of all, you can use it for Hannukah or Christmas because everyone loves it. You can make a huge batch and bring to both houses like us, one Jewish (sorta), one not. My Chinese family got addicted to rugelach from eating the giant boxes from Costco, which are dangerously good. Secondly, in December, fresh fruits are not very good in New York, so jams, preserves, and dried fruits are what’s in season.

Diabetes Cooking For Everyone

When I was asked to review  Diabetes Cooking For Everyone, by Carol Gelles, I couldn’t decide on which recipes to test. So, I left it up to you to vote for 3 out of 9 recipes. Here are the results:

  1. Afghan Lamb with Spinach – 49.1%
  2. Kasha with Walnuts and Mushrooms – 40.4%
  3. Chicken en Brochette with Orange Marmalade and Sherry Marinade – 35.1%

Before I get to reviewing the recipes where I will do my best to be objective, you should know that I cannot be completely objective about Carol. She is my friend and mentor. One day I will write a post all about her when I can gather up all the words I need to express my admiration, gratitude, and love. For this book, all you need to know is that she is an award winning (IACP/Julia Child Cookbook Award and James Beard Award) cookbook author , professionally trained nutritionist, and a type 2 diabetic.

Beet, Goat Cheese, Honey Walnut, Mandarin Salad

Beets and Goat Cheese are one of those matches made in heaven, and therefore show up in salads quite often. You can make it even more orgasmic but adding mandarin oranges (canned) and honey covered walnuts. I don’t like writing recipes for salads ( I do for dressing though) because the amounts don’t need to be so exact. If you really love one ingredient, you can put more.

Zucchini Apple Bread

It‘s that transitional time of year, where we still have some summer produce, like zucchini, and fall goodies are coming in, like apples. I decided to make something exactly for this window of time, Zucchini Apple Bread. I also wanted something relatively healthy. Lon and I have been putting on some weight. Relatively is the key, because I never let flavor and texture suffer for health purposes. I don’t like fake sugars and fat free baked goods.

This recipe yields a wonderfully moist and mildly sweet quickbread, with a very natural flavor. The visible zucchini pieces may even make you feel healthier when eating them. The only problem is that it tastes great, so you may eat too much.

This dinner was all about simplicity. Every preparation was easy and the highlight is the ingredients. When you’re using really good meat, ultra fresh vegetables, and super vinegars, oils, etc. you don’t need to get fancy. Let the ingredients do all the work.

Mini Carrot Spice Cupcakes with Cream Cheese Frosting

My friend Lily is moving away so I had to send her off with a treat. I love mini cupcakes and I love giving mini cupcakes. So, I decided on an apple/carrot spice flavor but you can’t taste the apple so I’m calling them Carrot Spice Cupcakes. I am so impressed with this recipe, as a first try. I would only change one thing, remove the nuts. The texture of the cupcakes is so light and tender that the crunch of nuts seems not to fit in. I will definitely be making these again (sans nuts).
