I kind of really fell off the planet for almost two years. Becoming a first time mom is tough, at least it really kicked me in the butt. It took me a long time to get back in the game (I hope you’ve noticed the new regularity in posting!) and then I realized: things had really changed since my “maternity leave”. What are all these new social media platforms? Panic! It was really daunting at first, especially because there was so many. I stalled several times yet once I did it, it quickly became habitual to take pictures of Caya on Instagram and plan out future home reno projects on Pinterest. And, thanks to the encouragement of Jackie and Blanca, I’m on Google+ now too. (I’m still a little lost on G+ but Chef Dennis Littley has a very helpful Community Education Series). So follow me on Instagram and Pinterest, and circle me on Google+. I’m back from the dead!

New social media platforms can seem scary to approach at first and so can unfamiliar ingredients. This beautifully earthy dish has some not-so-standard ingredients. Don’t fret; I’m here to walk you through.

Bean Curd and Watercress Salad

I know it has been a long time since I’ve blogged! And, NO little cousin Jeffrey, the blog is not dead. Give me some time! Caya is just under 15 weeks old and she does not like to nap. She takes up all my time all day long!

My mom made this Bean Curd and Watercress Salad all the way back in April for Sophia’s (my brother’s girlfriend) birthday. I loved it and it’s been on my mind since. The watercress has a squishy crunch to it. The bean curd is tender but firm. Together, the alternating texture and flavor is addictive and so cooling on a hot summer day.

Mushroom Lo Mein

With Labor Day and Rosh Hashana this week, our kitchen renovation has been on hold, although deliveries did come in. I received all of our appliances on Wednesday. I wanted to do a little dance around my 6 burner stove and 12″ grill. The exhaust is massive, like a bathtub! The fridge didn’t fit through our door so the refrigerator doors had to be removed and put back on. Today, all of our cabinetry will be delivered. We’re close to the finish line!

Until then, we’re still at my parent’s house where mom is dutifully making dishes for me. I decided on a noodle dish and my mom suggested Mushroom Lo Mein, a simple and light dish she often throws together for lunch when she’s by herself. It’s vegetarian, full of mushroom flavor, and a variety of textures. My mom used celery this time but sometimes uses napa cabbage, whichever one she has on hand. The flavor is different but equally delicious.

Chinese Beef and Peppers

Growing up, meals were almost always Chinese family style. Everyone gets a bowl of rice and a large plate to fill-up with goodies. On any regular weeknight, 4 to 6 different dishes would be set in the center, and we’d take first, seconds, and thirds, to our hearts’ content. Sometimes we’d end with soup, and always fruit. As I got older, I realized how impressive it was that my mom, who worked full-time, put this spread on the table night after night. It was always different too. (You can tell by now, my mom’s got quite a roster up her sleeves.)

One of the tips/tricks that makes this possible is offering a mix of dishes she already made ahead of time with one or two that can be thrown together really quickly. She might have marinated cucumbers in the morning as we got dressed for school. A variety of “red-cooked” meats, egg, or bean curd was probably made on the weekend. When she walked through the door, she’d whirl around the kitchen: steaming a fish and stir-frying another two like it was as easy as skipping. This led me to some wrong assumptions. I thought that every mother in the world did that and I thought it was no-sweat, easiest thing ever. I know now, I was so wrong.

Vegetarian Yellow Sparrow

Soo Hwang Chue sounds a little better in Chinese than it does translated into Vegetarian Yellow Sparrow, and like the Lion’s Head Casserole, these don’t really look like birds. Naming issues aside, it’s a fabulous dish. It takes a little prep work and a bit of finesse, so it’s one of those dishes that you want to make for your special vegetarian friend to show them that you went the extra bit for them. It’s full of so many nutritious ingredients like shitake mushrooms, black fungus, and lily buds, all considered to have medicinal properties to enrich good health. The edamame, dry bean curd, and  bean curd sheets round-out this dish with an abundant source of protein. In my opinion, this is the perfect vegetarian dish.

Eel with Yellow Chives

When I went to mom’s to learn Tee Pong (Red Cooked Picnic Shoulder), there was a theme that day. I was learning my grandfather’s favorite dishes, and after that fatty pig centerpiece, his next favorite was Eel with Yellow Chives. And just to let you know, he always finished every meal with oranges.

My grandpa insisted on eating these favorite dishes so much that my mom had to make it constantly, and we ordered it at restaurants too. Now, long after my grandfather passed away (in 1996), I realized that my mom hasn’t made Eel with Yellow Chives in years. I asked my mom why and she said it’s kind of a pain to make. Fresh eel requires a lot of cleaning. She also told me that sometimes she would be lazy and by frozen packs of prepped eel strips, ready-to-use, but in the last few years, she hasn’t seen it at the market. The yellow chives require some cleaning too.

Tofu and Mushrooms

You may have noticed a ton of Chinese recipes this week. It’s because my mom taught me a whole bunch on Monday, and normally I would have spread out the posts, but then we got sick, and these are all I have. Without these, the blog wouldn’t have been updated this week, or it would have been about saltines, ginger ale, and the flavors of different cold and flu medicines.

So here’s another great vegetarian recipe, healthy and flavorful. It’s a full meal if you throw it on some rice, or it’s a nice tofu course for a family-style meal. Left-overs can be kept in the fridge, and then it reheats wonderfully in the microwave.

Blanched Romaine with Garlicky Oyster Sauce

You may be thinking, cooked romaine? Yes! Trust me, or more trust my mom, who I think is the most fabulous self-taught chef ever. I was a little skeptical when she told me about this dish, but she told me that she makes it all the time. It’s an easy and unique recipe, definitely a keeper, especially if you’re looking for some interesting vegetarian recipes. You can make the sauce ahead of time too.

Five Mushrooms in Vegetarian Oyster Sauce

You might remember seeing this dish, a glorious dish of mushrooms, we just had at Jade Asian Restaurant. I loved it so much, I wanted to replicate it. Coincidentally, my mom was thinking the same thing and had just made the dish for New Year’s. She told me that the key was using Vegetarian Oyster Sauce, which is actually made from mushroom flavoring. She recommends the Wan Ja Shan brand.

There are some notable ingredients in this dish. First, I used a vegetable that was labeled baby bok choy at the market but it’s not, here’s a pic since I don’t know the name.
