One of my favorite childhood memories was going to IHOP (International House of Pancakes) with my family. My mom and I both loved Banana Nut Pancakes (which I don’t see on their menu anymore these days but you can ask for it). For some reason, as a 6 year-old, I thought I was cooler than my brother, just for the sheer reason that I had the same favorite pancakes as my mom. I would share a giant stack with my mom, smiling all the way through the meal, because I just knew my mom liked me more. Yup, purely because my brother would order something else.

Rugelach

Rugelach, not to be confused with arugula (a lovely peppery green), is a traditional Jewish pastry. To pronounce correctly, you should sound like you’re coughing up phlegm at the end.

Rugelach is the perfect thing to make this time of year. First of all, you can use it for Hannukah or Christmas because everyone loves it. You can make a huge batch and bring to both houses like us, one Jewish (sorta), one not. My Chinese family got addicted to rugelach from eating the giant boxes from Costco, which are dangerously good. Secondly, in December, fresh fruits are not very good in New York, so jams, preserves, and dried fruits are what’s in season.

Cheddar Cheese Crackers

Occasionally, but not often enough, my girlfriends from college come over for what we call Wine Night. It’s not nearly as pretentious as it sounds. We grab a couple of bottles of wines, some cheese, some fruit, some cured meats, some bread, and just sit around catching up. It’s the most relaxing way to entertain because everything can be bought and it’s easy for everyone to contribute. Everything is cold or room temperature so no stress over people arriving on time. Sometimes I make something and sometimes I don’t.

For this one, I spotted a Cheddar Cheese Cracker recipe in the Tartine cookbook. It actually has a little section called “With a Glass of Wine”. The genius behind these salty cheesy crackers is the use of nuts to keep it crunchy and crumbly. You don’t really taste it because the sharp cheddar is the dominating flavor. I made a few alterations and the recipe seems like one you could really play with (although the author warms to use a cheese similar in butterfat and hardness).

Cheddar Cheese Crackers
~makes 50 crackers

  • 3/4 cup all-purpose flour
  • 1 teaspoon table salt ( I might use a drop less next time.)
  • 1/4 teaspoon ancho chili powder
  • 3/4 teaspoon freshly ground black pepper
  • 2 1/3 cups grated sharp cheddar
  • 4 tablespoons unsalted butter, softenend
  • 2/3 cup (medium-fine) chopped pecans

Instructions –

1. Sift flour, salt, ancho chili, and balck pepper into a small bowl. Set aside.

2. Using the paddle attachment, combine the cheese and butter on medium speed, until combined. Add the flour mixture and beat on low speed until combined. Scrape down the sides of the bowl with a rubber spatula. Mix in walnuts on low speed. (You can do this all by hand but the resulting dough will be a bit stiff and hard to mix.)

3. Transfer to a sheet of parchment paper, wax paper, or plastic wrap, and roll into a log (a little more than 1″ in diameter). Wrap and freeze for 2 hours.

4. Preheat oven to 400 degrees F 30 minutes before baking. Line a baking sheet with parchment paper or silpat liner.

5. Unwrap the log and slice into 1/8″ to 1/4″ thick discs. Arrange the crackers on baking sheet about 1″ apart.

6. Bake the crackers for 7-10  minutes, or until edges are golden brown and lighter in the center. Transfer to a wire rack and cool completely. The crackers can be kept in an airtight container, in a cool dry place, for 2 weeks.

Notes: For more perfect circles, flatten the dough into a disc and chill for 1 hour, instead of making a log and freezing. When the dough is ready, roll it out and cut with a cookie cutter. I kind of like the rustic look though…

Pocket Full Of Nuts

I selfishly developed this recipe just for me. I love cream cheese doughs and I love nuts. I love desserts, but not too sweet, and cuteness is a definite plus. This recipe has it all and would be pure heaven with a good cup of coffee.

Every year at Passover, I can’t wait till we get to dessert, mostly because of Bonnie’s (Lon’s mom) Chocolate Chip Pecan Mandelbrot. If you haven’t had Mandelbrot, it’s a cross between biscotti and scones. I love it!

Fresh Apple Cake

When I have guests over, I like to make pretty cakes with frosting, a meringue topping, or glaze. For myself, I like things less sweet, and actually prefer simple cakes or quickbreads without any adornments. I think it’s the texture of cake that I’m truly addicted to. Add a good cup of coffee, and I’m like a puppy with a new toy.

I flipped around my cookbooks for an easy recipe that I had the ingredients for. This one was close enough, although I still needed to do a little substituting. The nutmeg is a bit strong for me, but it still satisfied my craving.

Green Tea Pecan Crumbles

These look kinda like mochi huh? They’re not. They are a play on snowballs or Mexican Wedding Cookies. I added matcha green tea powder for a subtle but interesting flavor change, and to make them green. After all, St. Patrick’s Day is just around the corner.

We had a little German themed dinner with pretzels, schnitzel, cabbage, and roasted potatoes so I wanted to follow through with a German dessert. I was feeling a bit lazy and decided to simplify German Chocolate Cake, a lot. I’m a little embarrassed by just how easy this was to make.

I love blueberries but they’re out of season. Luckily frozen blueberries are available year round. While I will still really miss popping fresh blueberries (one of my favorite snacks), I’ll have to settle for blueberries in baked goods for now. Oh, the suffering….hehe
