Creamy Homemade Ricotta from “Homemade with Love” by Jennifer Perillo

Sunday, April 14, 2013

As soon as my friend Jennifer Perillo’s book, “Homemade with Love” was available on Amazon, I pre-ordered it. I always wanted to know her secret to Risotto, which isn’t in the book Jennie! I still want to learn that one day, but I’ll forgive her for now because this book has quickly become one of my favorite cookbooks, full of simply amazing and totally do-able recipes. It doesn’t hurt that this book is also gorgeous. It could stand alone as a coffee table book. The colors, the fonts, the photos by Penny De Los Santos, and the soothing voice of Jennie, as if she was just guiding you in the kitchen. I truly love it.

I’ve tried four recipes from the book so far and every one was a hit. Fluffy is a modest description for the Buttermilk pancakes. The DIY granola uses ingredients I already have in my pantry. The Lentil “Meatball” recipe is a serious must-have for anyone who entertains a vegetarian. All the meat-eaters at my table loved it too and I really appreciate how it looks just like the meat version. Perhaps the most valuable find for me so far is the Creamy Homemade Ricotta.

Easy Fresh Peanut Butter Frosting in your Food Processor

Friday, November 19, 2010

We finally moved back in to our apartment and the kitchen is almost done. I’d say 94% finished and we’re hoping to share pictures soon. It dawned on me yesterday that I haven’t cooked, really cooked, since March, when we moved out of our old apartment. First, we didn’t have a kitchen. Then, I had morning sickness. Since March! Can you believe that?

When we moved back in, I was so eager to cook but we quickly realized it was going to take about a week to unpack all of our kitchen equipment, dishes, and pantry. It wasn’t till Wednesday night that I broke out cutting boards and turned on the oven. I experimented with a sausage and eggplant lasagna looking forward to making dinner for Lon for the first time in so so long. Alas, it was a decent dinner but needed work before it could be published. My heart sank. What if I forgot to cook after all this time?

No time to fret. We had already invited guests over for Thursday night to celebrate our friend Janny’s Birthday. (Happy Birthday Janny!) I made Bacon and Kimchee Sliders, a Chicken Pasta Salad (Janny’s request), and Chinese Broccoli with Oyster Sauce. For dessert, I served a Devil’s Food Cake with Fresh Peanut Butter Frosting! My fears were calmed and dinner seemed to please everyone. Lon, who I can always count on to tell me the truth, loved the peanut butter frosting to death!

Coffee Milk Tea

Wednesday, February 17, 2010

Coffee Milk Tea, called Yuen Yang (Ying Yang) in Chinese, is simply what it sounds like: coffee, milk, and tea. The coffee vs. tea debate is as common as the vanilla vs. chocolate, with fervent devotees on both sides. As hard as I’ve tried, I don’t favor one over the other and drink both coffee and tea almost every day. I wonder what that says about me? Indecisive, un-opinionated (ha, my brother is laughing out loud somewhere), equal opportunistic? It probably doesn’t mean anything other than my body can handle a lot of caffeine.

Perfect Biscuits

Saturday, February 13, 2010

I have played around with this biscuit recipe many times now, which started out as the Cheddar and Chive Biscuit recipe from BLT Fish. I have suspicions that it’s not the same recipe they use in the restaurant, but that’s a different story. I started with the recipe they shared, made it, liked it, then decided to play with it at times when I didn’t have the exact ingredients. Over the year since I tried the recipe, different cheeses have replaced the cheddar, and different herbs have replaced the chives. Almost every way is good.

Caramel Macchiato Cupcakes

Wednesday, February 10, 2010

It was time to make something special for Winnie’s birthday. Besides that, I kind of owe her. She was one of my first friends in college, possibly the second person I met. We were sitting next to each other in an economics class (theater style seating) when I just fell asleep on her. I had yet to speak to her but I already drooled a bit. Anyone who will then foster a friendship with the weird girl that just fell asleep on them is surely the sweetest and most forgiving person ever. We’ve been friends for 12 years now.

Fortune Cookies with Love

Wednesday, January 27, 2010

We’re on a tight schedule of recipe themes here, moving right on from Superbowl, to Valentine’s Day, and don’t forget Chinese New Year (or Lunar New Year) is the same days as V-day this year. I knew as soon as I took my last bite of Un-fried Buffalo Wing, I’d start thinking about hearts and good fortune. Can I combine the two into a loving Fortune Cookie?

Pancake Inspired Cupcakes: Banana Nut

Tuesday, December 29, 2009

One of my favorite childhood memories was going to IHOP (International House of Pancakes) with my family. My mom and I both loved Banana Nut Pancakes (which I don’t see on their menu anymore these days but you can ask for it). For some reason, as a 6 year-old, I thought I was cooler than my brother, just for the sheer reason that I had the same favorite pancakes as my mom. I would share a giant stack with my mom, smiling all the way through the meal, because I just knew my mom liked me more. Yup, purely because my brother would order something else.

Shrimp Pasta with Sweet Corn, Roasted Tomatoes, and Poblano Cream

Wednesday, October 14, 2009

Lon and I enjoyed that week in California, from Los Angeles to Napa Valley, so much more than we expected to. Neither of us like driving, but the views were postcard quality, and we broke the drive up into little pieces. Not only does it make the car rides seem short, we got to see and eat through so many little towns. Cambria, sticks out in my mind because it was such an adorable little place that we found by accident. No national chains. No sky scrapers. Knowing that we were tourists, one shop keeper asked, “How ever did you find us?”

Tropical Pineapple Tarts

Saturday, August 29, 2009

I named these Tropical Pineapple Tarts because the ginger-macadamia nut crust with a pineapple topping has that tropical feel, like a dessert you’d see at a resort in Hawaii. Ripe sweet pineapple is essential so if you can’t find good ones, use another fruit. The crunchy crumbly crust and mascarpone cream are both neutral canvases in w hich you can paint almost any fruit you like. My favorite alternatives would be diced peaches, strawberries, raspberries, or blueberries. You can even mix fruits.

Cold Brewed Iced Coffee

Saturday, August 22, 2009

It’s time for Weekend Shout-out and this week I have Amanda Mae at Mae Bird to thank for a wonderful Saturday morning. See, I’m a little addicted to Iced Coffee. If you watch my twitter, you’ll notice Iced Coffee just about every morning. In the summer, taking a stroll with my dog, Ice, and sipping an Iced Coffee, is my favorite past time, made only better by my hubby Lon coming along. (BTW, that’s not how Ice got her name.)

Amanda Mae posted about a Cold Brewing recipe from The New York Times, from over 2 years ago and then suggested adding a drop of almond extract, sweetening with agave, and completing with half-and-half. I loved the post because hearing about how someone drinks their coffee (or iced coffee) makes me feel like I’ve gotten to know them better. Coffee is very personal. How much sweetener you put and what kind, the whole gradient between black and extra creamy, regular or decaf, hot or cold, and preference for different beans and blends, and then maybe additional flavors.
