Chinese Chicken Corn Soup: Quick and Easy

Chinese Chicken Corn Soup is a nostalgic childhood favorite for me. I first wrote about it a year and a half ago (see short write up and not-so-good picture here) and it’s that time of year, when I need comfort again. Cold weather hits me like a ton of bricks. No…more like sharp dagger-shaped icicles stabbing me. I’m not usually such a drama queen but rain and cold temperatures are the things I’m just a big baby about. Every winter, I swear I’m going to move to a warmer climate, but 29 years of winter and I’m still here. Seriously, this Chicken Corn Soup is one of the things that saves me from collapsing into seasonal depression. It’s the fastest 10 minutes of barely doing anything, a little stirring, and you get a pot of Chicken Corn Soup. (This recipe makes enough for 6 people but I’ve eaten it all in one sitting before.)

My friend Emily has been studying for the New York State Bar Exam and decided to spend her birthday studying in Washington Square Park. She had this great idea, inviting friends to join her in the park, to study or read a book, or just say hi. Of course, I wanted to bring her some food. It’s really the best or only way I know how to say Happy Birthday!

Spicy Chicken Tortilla Soup

This recipe is the result of things in my fridge that I wanted to use up, which happens pretty often. I made a whole roasted chicken (about 3 pounds) a few nights ago but I’m not a big fan of white meat chicken so we just ate the legs and wings. This recipe uses the left over meat and the bones. I also had a large container of salsa from the bachelorette party weekend and I wanted to use that too. It was a spicy salsa so keep in mind that your soup will be more or less spicy depending on the salsa you use.

Quick Chinese Chicken Corn Soup

This is one of my favorite childhood soups. I asked my mom to make it all the time, and after dinner (traditionally, Chinese drink soup after the meal) I would drink 3 bowls. My mom makes a home-made chicken broth, which of course yields a better result, but here’s a quick version that still satisfies me when I want a taste of home.
