Chorizo and Butternut Squash Hash

I’m really into roasting potatoes with some fennel and sweet bell peppers and when I’m not serving vegetarians, little bits of ham or some bacon can add some smoky saltiness. Then one day, I wanted to turn that side dish into more of a meal. I crumbled some sausage in instead of the ham/bacon and threw an egg on top. Last weekend, my cousins came over and I mentally prepared to make that dish but when I started prepping, I realized we were out of potatoes. I dug through my fridge and thought maybe butternut squash would work. It did! The added sweetness counters the saltiness of the meat perfectly and the pop of orange color makes the whole dish so vibrant. I now wanted to write a recipe and post it so badly. I had more of all the ingredients except for the Italian sausage. That’s when another swap happened. This time I tried it with chorizo.

Rosemary Turkey Meatloaf

Meatloaf ain’t pretty but a good one is so tasty, moist, and comforting. It fills in those spaces left by the winter blues and it can be all that without being a heavy and fatty meal. This meatloaf is so tender, you could eat it after your wisdom teeth are pulled. It’s so moist, you won’t be reaching for your glass of water. Yet, I only used turkey meat, a lean protein, and besides one egg for the whole loaf, no fat is added.

As we ate it, Lon asked me, what’s making this meatloaf so moist? I listed ingredients and he kept saying, and…and…Well, that was it. No mystery gob of lard. This comfort food is healthy!

Earl Grey Apple Sauce

I saw a 3 pound bag of apples for $1 at the farmer’s market. One dollar! I didn’t even know what I was going to do with it. Apple pie, apple cake, doughnuts, fresh cider, apple crisps, the options are endless, and it didn’t matter because it felt like it was basically free. Sometimes, you just feel like a winner and yes, it is that easy to make my day.

More Pumpkin Lasagna Please!

When I first made pumpkin lasagna last year, I was afraid it wouldn’t work out so I made a small portion in an 8×8 dish. It turned out to be one of my favorite fall recipes, one that I am always bragging about to…well Lon and Ice (my dog). I’m just so proud of it. When pumpkins started showing up in the farmer’s market, I knew I was going to make this dish again. I figured I would re-do the old pictures, that did not do this Pumpkin Lasagna any justice. Then I realized the greater problem (yes, worse then how bad I was at photography back then). The portion was too small! You’ll never have enough with a 8×8 pan, even if you live by yourself. I swear. You won’t know how it just disappeared. I settled on making it in a conventional 9×13 dish, because that’s a pan size normal people own, but I really wish it was made in a giant roasting pan. Yea, the ones you can put a whole pig in. I love it that much.

When I made the Cherry Almond Cookie Pies, JP asked if I could make a version without nuts for his nephew. Well, since JP is partially responsible for how Lon and I met, the least I could do was design a recipe for him. See JP was one of the first people I met in college, the second person on the first day of school, to be exact. Fast forward to after graduation, JP works with a cool gal named Resa. Resa is Kasi’s bestfriend. Kasi is Lon’s sister. Got it?

Beet Chocolate Cupcakes

Remember when I was so so sad that I couldn’t eat the gorgeous Red Velvet Cake that Lon made (because I’m allergic to artificial food coloring)? Well, I still can’t eat Red Velvet Cake, but I’m still researching into a way to make it red without artificial food coloring. King Arthur is now selling some natural food coloring and one of them is red/pink, but the reviews warn that it’s only able to do pink, so it probably won’t be able to over-power the brown of the chocolate. There was some talk of beets, perhaps the original Red Velvet Cake (many different theories), but they seem to loose their color when cooked or mixed with baking powder or baking soda. So, no solution for making me a good Red Velvet Cake yet, but this beautiful Beet Cake at Straight From the Farm inspired me to make Beet Chocolate Cupcakes.

There’s a couple of things that lead to the making of this pie. One, I’ve been wanting one of those ceramic deep dish pie plates for a long time, the ones with the ruffled edges. They look so modern country, new yet classic. Unfortunately, it was $44 at Williams Sonoma so I tried to forget that adorable pie plate. Months later, I couldn’t believe my eyes when I saw one for $3 at TJ Max. No choice in color, but red will do for $3. I couldn’t wait to use it. (TJ Max does not have a consistent product line so you may not find this pie plate but they have great prices on kitchen stuff. You’ll find something.)

Strawberry-Rhubarb Cheesecake

This weekend, we headed off to visit family in New Jersey. One of my aunts makes some Taiwanese specialties that you seldom see here and she was going to show me some stuff. (More about that in future posts.) We could not arrive without some delicious offerings of our own so we decided on a seasonal cheesecake. It was a fun collaborative dessert. Lon made the cheesecake (because he is the cheesecake master) and I made the topping.

White Chocolate, Banana, Cherry Bread

Staring at my pile of over-ripe bananas, some sort of banana bread/banana muffin idea was tumbling about in my head. I spotted an interesting combination of flavors in Nigella’s book, How to Be a Domestic Goddess. It was cupcakes made with banana, dried cherries, and white chocolate. Not wanting cupcakes at the moment, I married the idea with Nick Malgieri’s Banana Bread and out popped this baby. I didn’t think banana bread could get better, and with white chocolate no less? I’m not even a big fan of white chocolate, but here it melts into the bread and adds a wonderful creaminess that makes bananas even more comforting.

Gado Gado with Beef

Whenever I have left-over steak, it becomes a steak salad or steak sandwich. The reincarnation must be something cold because I cannot stand reheating beef. I want it nice and rare or not at all. The other day, Caroline mentioned Gado Gado in a comment so it was fresh in my mind and I was now craving it, so that’s how this Gado Gado with Beef came about (it doesn’t usually have beef in it).

While I was going to depart from traditions anyway, I decided to take liberties to creating the color scheme I wanted and my dressing is not 100% authentic either. I absolutely love this version though and will make it again just like this for sure. (For a more authentic look, Rasa Malaysia has a great guest post from Indonesia-Eats. )
