Recipes that include Bread

Ramps, Prosciutto, and Cave Aged Gruyere

Finally! We moved, but it’s not all smooth sailing yet. We’re living out of boxes and we don’t have a kitchen yet. While our perfect kitchen is being built (which we will be talking about soon), I’m going to have to get crafty. I do have many plug-in appliances (rice cooker, toaster oven, panini press, waffle maker, microwave, etc.) so we’re still going to have a ball here. I think we’re going to be pleasantly surprised with how much I (or you) can do without a kitchen. (Gulp) Determined to eat well every single day without exceptions, here goes…

Over the years, I haven’t had the greatest opinion of Fresh Direct. Either something was left out of my order or something was broken. In 2006, I wrote about our worst experience where seemingly everything that could go wrong did: frozen stuff de-frosted, late delivery, ruined products, no solution through customer service. In the last four years, I’ve only ordered from them a handful of times, and it’s only because I love their par-baked breads, particularly the Ciabatta Rolls.

Bacon, Kimchee, and 6 Minute Eggs

I don’t often eat out alone. I don’t have anything against the practice or people who do, but I always want to try as many dishes as I can, so the more the merrier. Between a meeting and salsa class, I had to eat dinner so I reluctantly sat by myself at The Green Table 75 Ninth Avenue, New York, NY 10011 in Chelsea Market. My wonderful waitress found me a seat near a plug so I could do some work on my laptop. As I browsed the menu, the inevitable happened; I wanted at least 6 dishes. I started wishing, if only you were all here eating with me.

As I often do, I relied on my waitress to help narrow the field. When she started describing a burger with kimchee and bacon on it, I was immediately sold. It reminded me of the delicious pork belly and kimchee we had at San & Deul Restaurant, a memory still fresh on my palate.

The combination of kimchee and bacon hits an especially comforting spot for me, perhaps the blend of my taste buds being raised on both American and Asian food. To my relief, it’s also easily achieved. You can cook it together in almost any way you want. In my limited kitchen at the moment, I heated them together on a Forman Grill.

Do you ever feel like the universe is trying to tell you something?

It all started in February when I had dinner with Mary (super fabulous designer) at Employees Only. She told me that she and my cousin Jerry were running the marathon in Seoul, Korea. (Congrats you two!) Then, I get an e-mail from my friend Hilary, asking me about bicycles. She’s starting triathlon training for her first one. Beginning of March, I see that a new twitter friend is trying to raise money for her third triathlon. (As a proud TNT alumna, I encourage you to donate here!)  Then, we were watching Dinner Impossible and Robert Irvine’s challenge was to cook for Ironman athletes. He had to make a water meal (all cooked in water), a bike meal (everything cooked twice), and a run meal (using legs). The final straw happened this past weekend, my friends Bianca and Jen did the NYC half-marathon. (Congrats girls!)

Remy Mussels with Bacon and Fennel

Monday, February 15, 2010

If you haven’t seen Jamie Oliver’s TED speech, you should. It is truly inspirational. One of the many great quantifiable and very attainable goals he proposes, is to make sure each child leaves high school with 10 recipes that will save their life. With just 10 recipes, we can minimize the amount of fast food America is eating, curb the number of deaths associated, and reduce obesity related suffering.

ABC Scrambled Eggs

Sunday, January 3, 2010

When I was in Taiwan (a long long time ago), I’d start speaking to a vendor, and they’d immediately say, “ABC”, nod, and go on with their answer to whatever my question was. It was a little odd that everyone wanted to clearly acknowledge and label me as an American Born Chinese. It was obvious from my accent, or long hair (school girls are not allowed to have hair past shoulder length), or being XXL by their standards (which is a size 2 in the US).

Winter BLT

Friday, November 13, 2009

Yesterday, I woke up with flu-like symptoms that I really struggled with, but lost. I couldn’t even get up. Lon had already gone to work but my brother came over to walk Ice for me. Thanks Justin! I was so hot, it was causing a headache, but at the same time, I was shivering with chills. I had aches all over. Despite having this recipe for my Winter BLT already written and pictures in the camera, I just couldn’t get up to finish this post. I’m a little e-mail obsessed and I just let most of my e-mails go yesterday. I really can’t remember the last time I felt this incapacitated.

Cauliflower with Almonds, Cranberries, and Capers

Tuesday, November 3, 2009

I bookmarked this Michael Anthony (of Gramercy Tavern) cauliflower recipe on Smitten Kitchen, attracted by how interesting it is. Of course, everything on Smitten Kitchen looks delicious, but this was a recipe Michael Anthony created to convince his wife (when they first met) to like cauliflower. See, Lon does not like cauliflower, though I’ve tried a few times, and this just seemed different enough, perhaps…I finally did bring him over to the fungus side (he did not eat mushrooms for most of his life) so I was feeling pretty confident.

Fried Panelle Sandwich

Tuesday, September 1, 2009

Lidia Bastianich demonstrates fascinating recipes on Lidia’s Italy, her public access show.  On a recent episode, 211, she featured a specialty of Palermo, a city in Sicily, Italy: the Panelle Sandwich.  Jessica and I watched and drooled as Lidia and her nephew went around eating this rustic street food at different stands, wishing we were in Italy.

When Jessica made some hamburger buns, it jogged my taste memory. They looked perfect for the panelle sandwich because Lidia mentions that they are always served on sesame seeded buns.  I found Lidia’s recipe for Fried Chickpea Polenta (Panelle), but it was a bit large, and I recalled hers came out too thick, so I reduced it for my purposes.

May Crostini

Thursday, May 14, 2009

I was walking around the farmer’s market just sipping in the glory of spring. I love when the market is full of great produce. It’s like a different world compared to the winter months when all I see is apples. I wanted to highlight the bounty of May so I picked up some sunchokes, some healthy ramps, and even splurged on maitake mushrooms ($10 per 1/2 lb).

Sunchokes are tubers, a little starchier than jicama, but taste like mellow artichokes, but sweeter. I took this picture because I thought it was amazing how different they look when you scrub them.

Oxtails in Chinese Tomato Sauce

Oxtail with Chinese Tomato Sauce 3

Oxtails in Chinese Tomato Sauce was a regular part of growing up. My brother and I loved this dish; we’re practically made of this stuff. So when I opened my fridge and stared at the oxtails, I knew I had to make it for Lon so I called me mom for instructions. It turns out, it’s ridiculously easy, so if you have kids, this will end up being a regular in your house. I didn’t have a single cousin (in my large family) that could resist this stuff.
