Roasted Poblano and Chorizo Black Beans

I make black beans several times a year and I posted about it way back in April of 2008. This time, I made a large batch and felt compelled to post about it again. Why? For one thing, I needed to make sure that readers who were not with us in 2008 are made aware of this easy, healthy, and delicious recipe. And, I also realized that making it in bulk changed a lot of things in the process, which could help you when you need to feed an army. (If you want the smaller-sized recipe, feel free to go back to the original post.)

In case you were wondering, I made 16 servings to fill 8 jars for BK Swappers last week. BK Swappers is a genius free event started by Kate Payne of Hip Girls Guide to Homemaking and Meg Paska of Brooklyn Homesteader. The idea is for people who love to cook and eat, that’s me ( and probably you if you’re reading this), to make a batch of something and come swap with others. You make one big batch of something and come home with a mix of goodies.

Fiesta Egg Roll

For our Reader’s Choice: Egg Roll, you voted and the Black Bean Burrito Roll won. I changed the name but it’s basically the same concept. It has a couple of different components, so feel free to just use parts of this recipe. The Chipotle Rice that Lon made, is a nice side dish with some heat. The Black Bean Corn Salsa is an easy and colorful accompaniment for any barbecue or picnic. If you have time, put it all together, and have a fun Tex-Mex inspired Egg Roll. The Cotija Cheese, which I first heard about at The Duo Dishes, was a perfect match for this dish. It’s crumbly and doesn’t melt, but softens nicely, adding a nice salty milkiness.

Make Ahead Black Bean Soup

This black bean soup benefits from being made a day ahead so that the flavors can really come together. It’s always great to have these kind of recipes around because sometimes you want to get some of the cooking out of the way early, so you don’t have to rush day of.

Roasted Poblano Black Beans

I crave these Latin-style beans every once in a while. The flavors come together so nicely and its pretty healthy too. I usually make these beans with bacon but I have chorizo in my fridge so why not.

Roasted Poblano Black Beans

  • 1 teaspoon vegetable oil
  • 1/2 cup chopped onion
  • 2 cloves garlic, minced
  • 1 large roasted poblano, cleaned and chopped
  • 1/4 cup finely chopped chorizo
  • 1 can (15.5 oz) black beans, rinsed and drained
  • 2 tablespoons chopped cilantro

Spicy Chicken Tortilla Soup

This recipe is the result of things in my fridge that I wanted to use up, which happens pretty often. I made a whole roasted chicken (about 3 pounds) a few nights ago but I’m not a big fan of white meat chicken so we just ate the legs and wings. This recipe uses the left over meat and the bones. I also had a large container of salsa from the bachelorette party weekend and I wanted to use that too. It was a spicy salsa so keep in mind that your soup will be more or less spicy depending on the salsa you use.
