Ramps are in season and though they are not traditionally found in Chinese food, they make perfect sense in Chinese food. I think of ramps as sweeter, fatter, less pungent Chinese chives. I would bet you could successfully substitute ramps for any recipe that called for Chinese chives. Next, I want to do some dumplings with ramps!

Last week, I was in a rush to make dinner. I knew I had some fresh squid and ramps in the fridge and wanted to make something with Chinese flavors because Chinese food is definitely Caya’s favorite and she has really missed it while we were in Martha’s Vineyard. This is the dish that somehow made it to the table after two minutes of thought, Squid with Ramps in Black Bean Sauce. Caya and Lon loved it so much that a few days later, I made it again. Caya devoured it and so I made it again…

Clams with Black Bean Sauce

I wish I could convince more people to cook bi-valves and it’s not just because I love them so much. I hear from nearly every novice cook that they are afraid to cook clams and mussels. They just assume it’s going to be difficult. On the contrary, it’s easier than learning how to cook chicken or pork (in my opinion). The key to all proteins is to NOT over-cook them and clams tell you when they’re done. When they open up, they’re done!

Stuffed Peppers with Black Bean Sauce

Marc at No Recipes started Blog Away Hunger, a way for us to contribute to a great cause while cooking and blogging. The idea is to make a meal that is cheaper than your usual meal and donate the rest to World Food Programme. Easy!

I’ve been wanting to participate for a while now, but I’ve been waiting for the perfect recipe. I wanted it to be cheap (the cheaper it is, the more I can donate) and I wanted it to be a complete meal with protein, veggies, and carbs. It should be filling and delicious, a good cost-saving way to feed any family.  Growing up, my mother never let us leave the table without a balanced meal. We couldn’t pick out the veggies, or leave pieces of rice. She taught us early on not to waste. Taught may not be the right word there, more like beat it into our skulls. In any case, these Stuffed Peppers with Black Bean Sauce was always a favorite of my brother’s and this complete meal is so cheap to make. I’m estimating $4.50 for 2 people: $3 for peppers, $1 for ground pork, 50 cents worth or sauce and rice. I don’t know how much we usually spend on meals. It really varies, but let’s say $20 for the two of us, so I’ll be donating $15.50. Don’t forget to check out Marc’s page on Blog Away Hunger.

Chinese cooking is all about mise en place. For many dishes, once you have all the prep ready, the cooking part only takes a few minutes. Seriously! This is a perfect example, as the stir-frying part literally takes 3 minutes, assuming you don’t have a weak stove.

Do Fu Gan and Veggies in Black Bean Sauce

There’s a very firm tofu product called Do Fu Gan. It’s way more firm than “firm” tofu. This package is labeled Flavored Tofu, which is such a dumb name. I know it doesn’t look so appetizing, but it’s great stuff, trust me.
