Bacon Wrapped Dates

What do nearly all tapas restaurants have in common? Bacon Wrapped Dates! Usually stuffed with almonds, they are the perfect nuggets of salty wrapped around sweet. Each bite is intensely flavored, exuding a smokey aroma.  These morsels are worthy of that cliche label, “match made in heaven.”

Every time I go out for tapas with the girls, they order the bacon wrapped dates, without fail and usually order seconds. If you’ve somehow missed this delicious treat, head out to Alta, Pipa, Boqueria, Sala 19, or make it yourself. It’s laughably easy!

Crunchy Cranberry Salad

Finally! We moved, but it’s not all smooth sailing yet. We’re living out of boxes and we don’t have a kitchen yet. While our perfect kitchen is being built (which we will be talking about soon), I’m going to have to get crafty. I do have many plug-in appliances (rice cooker, toaster oven, panini press, waffle maker, microwave, etc.) so we’re still going to have a ball here. I think we’re going to be pleasantly surprised with how much I (or you) can do without a kitchen. (Gulp) Determined to eat well every single day without exceptions, here goes…

As I packed up the kitchen at our last apartment, and cooked my last few meals, I started panicking a bit. Ok, a lot. I knew we wouldn’t have a kitchen for a while. But, as I started packing up our utility junk drawer, guess what I found inside?

Almond Meringues with Dulce de Leche

Since I posted that incredibly easy method for making Dulce de Leche, I’m sure you’ve been wondering what I was going to do with it. Yeah, me too. Ideas have been tumbling around, but each one gets pushed to the back of my mind. I’ve been distracted with all the details of moving. Normally, I wake up and think about breakfast. Eat breakfast, and then think about lunch. Eat lunch, and then think about dinner. These days, I’ve been thinking about boxes, how to wrap fragile stuff, where is that book I can’t find? (of course Lon packed it), and what if I get there and hate it? Yea, I’m panicking.

Rugelach

Rugelach, not to be confused with arugula (a lovely peppery green), is a traditional Jewish pastry. To pronounce correctly, you should sound like you’re coughing up phlegm at the end.

Rugelach is the perfect thing to make this time of year. First of all, you can use it for Hannukah or Christmas because everyone loves it. You can make a huge batch and bring to both houses like us, one Jewish (sorta), one not. My Chinese family got addicted to rugelach from eating the giant boxes from Costco, which are dangerously good. Secondly, in December, fresh fruits are not very good in New York, so jams, preserves, and dried fruits are what’s in season.

Vanilla Almond Oatmeal

I first read about almond milk on Taste Memory, one of our first blogger friends, a long time ago. Wow, time flies. Made from pressed almonds, it’s very natural and doesn’t contain any dairy. Lon is a lactard (lactose-intolerant) but doesn’t like most soy milk, so almond milk has been his go-to with cereal when he’s not eating it dry. It goes particularly well with Honey Bunches of Oats.

Cauliflower with Almonds, Cranberries, and Capers

I bookmarked this Michael Anthony (of Gramercy Tavern) cauliflower recipe on Smitten Kitchen, attracted by how interesting it is. Of course, everything on Smitten Kitchen looks delicious, but this was a recipe Michael Anthony created to convince his wife (when they first met) to like cauliflower. See, Lon does not like cauliflower, though I’ve tried a few times, and this just seemed different enough, perhaps…I finally did bring him over to the fungus side (he did not eat mushrooms for most of his life) so I was feeling pretty confident.

Cherry Almond Cookie Pies

A wedding tradition in Pittsburgh is the Cookie Table, where friends and family bring cookies to put on the table. It’s quite a spread, as you can imagine, and everyone gets to participate in their own way. It’s one of the coolest traditions ever, that I would have adopted, regardless of being in New York, had I known about it before.

Pocket Full Of Nuts

I selfishly developed this recipe just for me. I love cream cheese doughs and I love nuts. I love desserts, but not too sweet, and cuteness is a definite plus. This recipe has it all and would be pure heaven with a good cup of coffee.

Tequila-Guajillo Bar Snack

Blueberry Almond Caramel Popcorn

A while back we sampled some delicious Blueberry Popcorn from Trader Joes. However, they don’t seem to sell it any more. The result: I made our own. For this recipe, I started with corn kernels, but you could just as easily substitute any other popcorn, you’ll need about 5 quarts.
