It was time to make a birthday cake for my little brother, Justin, 6 foot 1 inch tall and about twice my weight, but still my little brother. He doesn’t really get excited about cake so I struggled a little over this one. Lon reminded me that Justin isn’t into frosting. It seems he often wipes some off. Janny reminded me that Justin likes blueberries. So, despite using blueberries on a cake just recently, I was going to do it again, but in a birthday cake with no frosting. I know some would not call it a birthday cake if it does not don the billowy puffs and swirls of sugar, so if that’s you, just call this a perfect tea time cake.

Fancy Crab Fried Rice

There are so many versions of fried rice. I’m not even going to try and guess how many there are. Yet, what makes it a fried rice? My mom once told me that the very basic Chinese version is just scallion, egg, and rice. That’s all you need for fried rice and any other additions are your choice.

Strawberry Ginger Juice

Lon and I haven’t been feeling great. Poor Lon has the flu and I have a mean cold. We started the week off with lots of gingerale but it’s a silly tradition for illness because there’s no ginger in it. The carbonation may help but we were still missing out on all the wonderful health benefits of ginger. I started thinking about how the standard commercial ginger ale didn’t taste all that great either, and that’s how the Strawberry Ginger Juice came about. It’s quite spicy from fresh ginger so cut down a bit if you don’t like it so strong and the agave sweetener is optional because it depends on how sweet your strawberries are.

Strawberry Ginger Juice
~1 serving

  • 9 oz hulled strawberries
  • 0.5 oz peeled fresh ginger
  • 2 teaspoons freshly squeezed lime juice
  • 1 teaspoon agave sweetener (optional)

Instructions –

Put strawberries and ginger through a juicer, collecting juice in a small cup. Stir in lime juice and agave (if using). Drink and rest up.

Grilled King oyster Mushrooms 2

My friend Angie gave me a bottle of Ume Plum vinegar, asking me to figure out what to do with it. I’ve let this assignment sit on the back burner for a while, not really on purpose, but maybe there was some subconscious procrastination. I tasted the vinegar alone and it’s very salty compared to most vinegars and despite the presence of acid, it’s not really what you expect vinegar to taste like.

I had some King Oyster mushrooms and finding new uses for it has been on my imaginary notepad as well so I decided to kill two birds with one stone. I couldn’t believe my luck. This simple recipe, and first try, was perfect. I seriously wouldn’t change a thing about it. The King Oyster mushrooms have a juiciness that you can’t imagine, even when grilled, and the ume flavor is perfect on mushrooms.
