Recipe provided by Hellmanns:
Olive Chicken Thighs
Ingredients:
- 4 chicken thighs bone in
- 1/2 cup Hellmann’s mayonnaise
- 1/4 cup minced green olives
- 6 basil leaves minced
- 2 cups chicken broth
- Juice of 1 lemon
- 3 tablespoons butter
- Olive oil
- Salt and pepper
Directions:
1. Mix Hellmann’s mayonnaise, olives, and basil.
2. Stuff mixture under skin of each chicken thigh.
3. In a large sauté pan add oil and heat to medium.
4. Season liberally with salt and pepper each stuffed chicken thigh.
5. Place thighs skin side down into sauté pan and sear for 4 minutes.
6. Flip and cook for 4 more minutes.
7. Add chicken broth and lemon juice and place in 400 degree oven for 10 minutes
8. Remove from oven and whisk in butter and serve.
