This may be the easiest recipe I’ve ever written.
It came about as a very last-minute decision just minutes before serving dinner to my little family. Dinner had already been prepped and planned during Caya’s nap as usual. Lon had just arrived at home, which is usually 15 minutes later than ideal. We rush through a hand-off of Caya to Lon and I need dinner on the table in under 10 minutes.
In my mind, I was pretty much set: a carb, a veg, a protein; the three minimum requirements I have for a meal. As I looked at my dinner, it dawned on me that it’s incredibly plain. I love plain bread (with good olive oil or butter) and I often keep veggies simple, sauteed with garlic and oil. Good meat is also just fine seasoned with salt and pepper. Nothing is wrong with any part of my dinner when paired with other dishes but when all three are so plain, that is a boring meal. In a moment of panic, I dug through the fridge to see if I had any left-over sauces to dress-up dinner a little. I saw a jar of sun-dried tomatoes next to a jar of capers and I thought, hey I could make a sauce with that but making a sauce might take too long so I just chopped it up, added garlic, warmed it up and put it on top. I threw it on the table and thought, that looks pretty nice. Hope it tastes good…
When Lon took a bite, he raved and said the magic words, ” I would gladly pay for that in a restaurant.” Sun-dried tomatoes and capers are both robust flavors. They match up well together where neither will over-shadow the other. Both are salty with just the right balance of acid, yet different in flavor, each making a valuable addition. The small bits and included sauce (juices) glaze the chicken; easily allowing loads of flavor with each bite of chicken.
You can serve your chicken breast whole or sliced for sharing, which I consider another plus about this recipe. Sometimes, sliced doesn’t look that good, but all covered up, it looks great.
Easy Chicken Breast with Sun-dried Tomato and Capers
~2 servings
- 1/4 cup + 1 tablespoons chopped sun-dried tomatoes packed in oil
- 1/4 cup drained capers
- 1 clove garlic, minced
- 1 large chicken breast prepared your favorite way (grilled, pan-fried, sous-vide, poached, etc.)
Instructions –
In a small pan or pot, warm sun-dried tomatoes, capers, and garlic over medium heat. Once it is heated through, just spoon over the top of your prepared chicken.

Olivia, I sous-vide the chicken in this picture which might not be realistic for everyone. You can use this recipe with chicken prepared anyway though and the key is using a thermometer so you don’t over-cook, especially chicken breasts. OR, you can even buy a rotisserie chicken and just throw the sun-dried tomatoes and capers on top. It’ll be delicious!
Bill, when I say large chicken breast, that’s one from a 5+lb chicken and I find those extremely large to eat for one person, actually quite a portion for even 2 people. But hey, I guess this is America?
