You know from my Sausage on Salad post that I have hot Italian sausage in stock. Today, I was debating lunch once again. I am feeling better (thanks everyone), but I have lots of errands to run today so this still had to be a pretty quick meal. Luckily, I have fresh broccoli rabe from the farmer’s market and I love it with sausage. It’s a pretty common pasta to see at Italian restaurants, but here’s a fast and easy, healthier rendition.
Sausage, Broccoli Rabe, Cannellini Pasta
~2 to 3 servings
- 4.5 ounces dry pasta (any shape)
- 8 ounces hot Italian sausage, casings removed
- 1 (19 oz) can cannellini beans, rinsed and drained
- 4 cups roughly chopped (1″ pieces) young broccoli rabe
- 1/4 cup chicken broth
- kosher salt and black pepper
- grated Parmesan (optional)
1. Cook pasta according to box instructions. Rinse with cold water, drain, and set aside.
2. Crumble sausage into a large skillet on medium heat. When it starts to release oils, mix in beans. When sausage looks close to cooked through, stir in broccoli rabe. Season a little bit here.
3. When broccoli rabe is wilted, add pasta and chicken broth. Turn up to high heat and stir around for about 1 minute, or until most of the liquid has evaporated. Season to taste. Garnish with Parmesan if desired.

That first pic is AWESOME and it all looks delicious! I like to keep Italian sausage (usually sweet for me, though) in the freezer in 2-3 link sandwich bags for quick weekday meals. (It’s SO much cheaper to buy the family pack than the smaller pack, even at a regular supermarket!)

the sausage is right at home in this dish–it’s the perfect combination. as a bean lover, i’m always excited to see their addition to a pasta dish–it’s so rare!
Great looking dish. I like cannellini beans in pasta dishes and hot Italian sausage doesn’t hurt either.
