Lon and I aren’t feeling that great today so we didn’t want to go buy groceries. We didn’t want to spend a lot of time cooking. So this is what we got, Lazy Chicken Sausage Soup. It’s made with all things we had and takes a max of 10 minutes to make, and tastes quite good.

Lazy Chicken Sausage Soup
2-3 servings

  • 4 cups chicken stock
  • 1 cup chopped cooked chicken sausage
  • 1 1/2 cup frozen chopped spinach
  • 3/4 cup cooked whole wheat orzo
  • 1 tablespoon freshly squeezed lemon juice
  • salt and pepper to taste

Instructions –

1. In a 3 1/2 quart pot, bring chicken stock to a boil. Add chicken sausage and bring back to a boil. Turn down to a simmer and cook for 3 minutes.
2. Stir in frozen spinach and allow to cook for 3 minutes without increasing the flame. If it has not come to a boil yet, now increase the flame and bring to a boil. Remove from heat. Stir in orzo and lemon juice, season and serve.

*note: Depending on the type of chicken sausage you use, it will taste different, but should still work. I used one made with roasted red peppers and asiago cheese. If your sausage is not made with cheese and you want that flavor, feel free to sprinkle a little parmigian or asiago on each bowl when you serve.
