Have you been watching the Olympics? Wow, Michael Phelps rocks! Our beach volleyball teams look pretty hot too. So I’m feeling pretty patriotic and I decided to make a Red, White, and Blue Pie. If you’re one of those people who needs an excuse to eat dessert, I just threw you a new one: it’s the Olympics and you have to celebrate that with this pie! You could always wait till the next 4th of July, but you’ll regret it.
Red, White, and Blue Pie
~10 servings
1 (9 inch) deep dish pie crust, unbaked
3/4 cup white sugar
1/3 cup + 1/2 cup all purpose flour
1/8 teaspoons salt
2 eggs
1/2 cup sour cream
1 teaspoon vanilla extract
1 1/2 cup blueberries, rinsed and dried
1 1/2 cup raspberries, rinsed and dried
1/2 cup light brown sugar
1/4 cup butter, chilled, cut into small pieces.
1. Preheat oven to 350 degrees F (325 degrees F for convection) and roll out pie crust. Fit it into a 9 inch springform.
2.In a medium sized bowl, combine sugar, 1/3 cup flour, and salt. Mix in eggs, sour cream, and vanilla extract, until well blended.
3. Toss blueberries and raspberries together and place them in the pie shell.
4. Pour sour cream mixture evenly over the berries.
5. In an another medium sized bowl, combine brown sugar and 1/2 cup flour. Cut in the butter until it resembles coarse sand. Sprinkle over the berries and sour cream mixture.
6. Cut off any extra pie crust that goes too far above the topping. Bake for 50 minutes, or until lightly golden.
7. Cool completely and refrigerate overnight.


That looks delicious. I just may have to make that this weekend. Yum Yum.

Wonders, yup, pretty darn easy, the hard part is letting it chill in the fridge over-night. It’s so hard NOT to dig in when something comes fresh out of the oven.

Hi Jessica…old guy back again! Marie just went to get the pie crust! And I think she will use 3 berries, strawberries, raspberries, blueberries!!! And buttermilk rather than sour cream…I am like Lon, lactose intolerant, but not with buttermilk! Figure that one out:-)
I just made a quinoa pilaf for brunch, served it with poached egg! Got raves from SHE who must be fed! And me too, of course…will letcha know how it runs out, don’t think it will make it overnight in fridge, few hours rather! Thanks again…
