Spritz Cookies are wonderfully versatile. When you want to make it look like you’ve made different cookies, when you really made just one, make a batch of Spritz cookies in different shapes. I used a cookie press for the first time (deprived childhood right?) and it was harder that I thought. Several shapes just did not work, but I managed to salvage a few so I could make more variations, again, we’re trying to make it look like different cookies.
- If you have some that are close enough in size and shape, you can put some jam or preserves in between and make a cookie sandwich. You can get several different colors this way, with apricot, raspberry, lemon, blueberry, etc. I also did chocolate sandwiches.
- You can also add some food coloring to the dough to make different colors of spritz cookies, or you can decorate with colored icing.
- Dip some of the cookies in melted chocolate. Spritz cookies dipped in chocolate have a special place in my heart because the bakery next to the skating rink I went to made great big ones. All the older girls would buy them, so of course, I wanted it too.
- You can also dip them on the under-side of the cookie and then dip that in crushed nuts of your choice. You can get yet another variation by using white chocolate.
- Dip in chocolate or spread on preserves and you can then dip in sprinkles. Sprinkles come in several different colors and shapes, again, tons of variations.
…I think you get the idea.

Jessica, Lon made me eat 2 of these cookies and then is making me blog about it. The chocolate you used was great! I like darker chocolates and this did the trick. Happy to be of service any time. Maybe a 3rd cookie just to be sure…
I concur on your selection of the chocolate. It’s just perfectly bitter, which balances so well with the cookie itself!

I tried 2 of the variety of cookies.
First, I tried the chocolate and almonds on the top. It was very delicious. It was so good, I had to have another cookie. 🙂
The second one I tried was the plain one. I enjoyed both very much.

OMG, I was imagining making all kinds and flavors of spritz cookies and handing out little tin of assorted spritz cookies for Christmas presents. I never thought of the chocolate dipping and sandwiches and chocolate and nuts. This is awesome!
