I came up with my perfect breakfast about 5 years ago because I needed a healthy, athlete’s breakfast (good carbohydrate and protein). It’s oatmeal with an egg over-easy (made in a non-stick pan with Pam so I don’t add fat) on top, generously seasoned with salt and pepper. This may seem odd to you since most people have oatmeal with honey, cinnamon apples, or something sweet. But consider it a new take on the Chinese breakfast, congee, which is a savory rice porridge. If I call it fusion food, will you eat it?
I love runny egg yolk. It is nature’s ready made sauce that coats anything it touches. It’s rich and fatty yet having just one egg controls the amount. Oatmeal has that wonderful chewy starchiness while being high in fiber. This savory oatmeal breakfast became a staple for me when I noticed that it kept me full longer, which makes sense since oatmeal and eggs are both in the top 10 of the “satiety index”.

I’m not a huge oatmeal fan but I force myself to eat it every work day since it keeps me more full than a bagel. Bagel = more delicious, at least triple the calories though so oatmeal it is!

I tried this today and it is great! It was very filling and satisfying. I often crave something salty in the morning instead of the regular sweet stuff. I often end up having a sandwich but this is what i will have from now on. I kinda needed two eggs instead of one because I had some leftover oatmeal so we’ll see. Thanks!
I have tried oatmeal with an over easy egg and it was great! I have also thrown in a little frozen peas and carrots, rotel tomatoes, chicken, pintos beans,etc. The possibilites are endless. Try and enjoy!
I’ve recently been trying to remove wheat and dairy from my diet. I begin each day with oatmeal. Getting tired of the sweet stuff I am began getting creative. I really like the McCanns IRish Quick Cook oats. Fry an egg, leave the yolk runny and top your oatmeal with that and salt and pepper. Try oatmeal with butter (I use Smart Balance) a little salt and pepper and Tabasco “Sweet and Spicy”. It’s really good. My next adventure will be an oatmeal and black beans concoction.
I really need to get on the savory oatmeal bandwagon! My tendency to get sick of oatmeal is pretty high, but I think I’d like a savory version better than the sweet standard.

I am on a low sodium diet for a while which rules out my favorites, bagel with cream cheese or eggs and Bacon etc. This sounds like a great alternative. Thnaks

Gordon, let me know how it tastes without the salt. If you can use pepper, the freshly ground pepper does add a lot.

This is the only way I eat my oatmeal. Another delicious savory oatmeal combo is plain oatmeal with black beans, salt, and pepper. Mm!

Nothing was wrong with it; just didn’t like it as much as other oatmeal combinations I’ve been using.

I have been “seriously” eating oatmeal for about a year and have, for the most part, always made it with powdered broth/bullion, about a half teaspoon of diced green chiles (or canned Mexican-style tomotoes) (and/or black beans) mixed into the water before adding to the oatmeal. Its fantastic! If I have left over broth (chicken, beef, whatever!) I use that too…….The way I look at it is: if you like rice pilaf, risotto, couscous, etc. (all grains, as is oatmeal) and you use savory seasonings and flavors with them, why not oatmeal?
I’ve also introdfuced diced ham, cheese and eggs….All wonderful!
