This is the salad served at every Israeli or Persian restaurant, its easy and delicious, and may be prepared in advance. I certainly do not claim to have invented this recipe that is basically the same as everywhere. I just wrote down the method I use.

Makes:
8 Servings

INGREDIENTS

  • 2 large cucumbers
  • 2 large beefsteak tomatos
  • 2 large green bell peppers
  • 1 lime
  • 1 lemon
  • granulated garlic
  • salt, pepper, olive oil, & balsamic vinegar to taste

DIRECTIONS

  1. Dice all the ingredients to equal size, small pieces, no bigger then a 1/4″ cubed. Toss together in a bowl with sprinkle of garlic and black pepper.
  2. 5 Minutes before serving, add the juice of 1 lime and 1 lemon. Also add salt. Toss together and let stand for 5 minutes.
  3. Serve with the olive oil and balsamic on the side, let guests use as desired (tastes great without it). Also, tastes great with mayo on it.
