		<description>Great, detailed interview with Josh.  Since you mentioned Humboldt Fog, I had to weigh in with some pairing thoughts from someone here (at Cypress Grove Chevre) who has a strong backgound in brewing.

Here&#039;s what he had to say about beer pairings with Humboldt Fog: &quot;I would recommend a nice, well attenuated American amber or an assertive old or strong ale for a complimentary flavor. For good contrasting flavors I would opt for a chewy German Doppelbock or even a continental IPA. Personally, in this case, I would steer clear of American IPA’s due to their over-powering and taste bud annihilating flavors and aromas.&quot;  Thanks and keep it coming.

I like that he eschews the niche audience that people tend to associate with craft beers, and I feel exactly the same way about drinking local beers. I found that Chicagoans aren&#039;t the only ones who are quick to pour you a local; when I was in Boulder and Fort Collins, Colorado, every time I ordered a Fat Tire someone was eager to discuss it with me. Such a great sense of community emerges from beer, and it ain&#039;t just the alcohol that makes it this way.</description>
