An idea for dressing up basic chocolate chip cookies……

Use any basic chocolate chip cookie recipe and replace the chocolate chips with chopped bittersweet chocolate. Bake as per instructions and cool completely. Spread a thin layer of homemade or store-bought buttercream between each pair of cookies until all the cookies are cookie sandwiches.

I used a peanut butter buttercream recipe in Carole Walter’s book, Great Cookies.

It was a hit with my guests and looks way more impressive than regualr chocolate chip cookies.

There are a few more pictures of these sweeties on Flickr.
